The "gas station" tater logs like that are boiled for a few minutes until they start to get soft, drained and cooled, then breaded in the chicken breading just like the chicken and fried Regular fries, soak them in cold water for awhile to get the starch out, then deep fry them at about 300 for a few minutes until they're blonde, then drain, cool, and fry again at 350-375 until they're crispy
