I have a 700r4 in my recently finished 69 There is an adjustment on the throttle cable Mine is right behind the carb near the coil You can loosen the fitting and then adjust the shift points I adjusted mine and it made it like a new car Previously it was shifting out way too soon Now it will hold in a gear till near the red line

700R4's had a letter and number codes with either 2 or 3 letters I know the use of 2 letters indicated that it came from an 82 to 85 car truck The 3 letter codes are from 86 to 93 years Those codes also can be used to tell with which motor the car was equipped I think that they came in a 27 and 30 spline output shaft

No he's got the dish Turbo 350s are vacuum modulated trans the 700r4 went to TV cables to measure if you will, throttle opening to adjust its pressures thats why TV cable adjustment is critical the 4l60e went to electronics - using TPS to adjust pressures Sounds like you met an expert idiot at the show
