Frank, You could load your elevation data and set the elevation shader to the gradient shader and set it up to go from black to white or white to black on the Shader Options tab of the Configuration dialog

To create multiple map legends what you would have to do is setup one map legend, then right-click on the map legend when displayed and save to a BMP, then load that BMP with the File->Open Data File at Fixed Screen Location menu command and place it where you want
