Experience with Sey Coffee I've had a couple of coffees from Sey and it's been my first time trying coffee that is roasted this light My other experience with "Nordic roasts" is La Cabra, Friedhats, Manhattan, and various other European roasters of this style whose coffees I've really enjoyed over the years

Personally I like softer water with Sey coffees coffees that are as light as Sey, usually somewhere around 40-60 ppm, sometimes lower These coffees usually need at least 4 weeks rest time, oftentimes needing 6-8 weeks to truly get best results

SEY and La Cabra roast their coffee very differently Your experience with inconsistency in La Cabra’s coffee seems pretty aligned with a lot of other people’s experiences on here
