I used unsheathe through the whole first playthrough but for difficult bosses I dual wielded rivers of blood with a bloody wakizashi I think unsheathe still works pretty well I found myself only attacking bosses once and dashing out at late game, some only give you enough opportunity for one strike at a time and unsheathe is good for that

If I remember correctly unsheathe on release version had massively over the top poise damage so FromSoft nerfed it because katanas being fast with long reach and a straightforward flexible moveset AND having small bleed was enough of a reason to use them They didn't need unsheath to compete with greatswords for poise damage
