I know this sounds specific, but my all-time favorite dish at a favorite restaurant is an eggplant Parmesan that is just beautiful It’s as the title states: stacked with many thin layers, not at all chewy or has any “eggy” flavor from the bread crumb coating, and doesn’t have any extra spice flavor (from bread crumbs, etc)

Pecorino is sharper and sheepy, and a little more creamy, and parmesan more complex; IMO pecorino for a perfect carbonara, and for the lovely lemon spaghetti I make to Gennaro Contaldo's method, and parmesan for most other Italian cooking foodie uses That said, I get through more pecorino, as carbonara is a staple here!

I found my own answer, but it's interesting: Kraft parmesan is real parmesan, because in the US, the word "parmesan" doesn't mean anything! Since 2008 in the European Union, the word "Parmesan" is defined by law to be only genuine Parmigiano-Reggiano made according to Italian D O C regulations

In Europe its straight up anything labeled either Parmesan or Parmigiano Reggiano is the real deal, though similar sounding imitations exist Real Parmesan is also exported in wheels, so if you buy larger chunks (or a full wheel) it’s more likely to be legitimate If you buy it whole the rind should be stamped indicating authenticity
